Mexican-style Tomato Soup

This healthy soup is substantial enough to be a main meal, and you can vary the ingredients and accompaniments based on what you have available.​

One-Pan Roasted Veg and Beans

This is a healthy yet satisfying lunch or supper, with a taste of the Mediterranean!  Great for lockdown, as you can vary the ingredients, depending on what you have in the fridge or cupboard.  Do share your variations, comments and photos in the “comments” section!

Macaroni Cheese

Serves 4 

A classic, especially good on a gloomy day!  Don’t be afraid of making a white sauce from scratch – if you warm the milk first and whisk constantly, you can’t go far wrong!  Macaroni cheese freezes well: cool after assembling, then freeze, making sure you defrost thoroughly before baking.
